Quick And Easy Potato Salad

Today I’m sharing our secret family Potato Salad recipe. My mom’s potato salad recipe is hands-down the best potato salad I, or anyone else who’s tried it, has ever eaten!

Potato Salad

Over the years I’ve watched countless relatives and friends swoon over her classic potato salad.

The problem is, when you ask her for the recipe she has a hard time sharing it, because she doesn’t actually have a recipe written down. She makes it by feel.

It’s taken years of watching, assisting her, and asking questions to come up with what I consider to be her recipe.

  • 6 yellow potatoes
  • Half of a red onion, optional
  • 6 eggs, hard boiled
  • 3 tbsp chicken bouillon, or 4 cubes of them
  • 1-2 cups mayonnaise
  • 2 tbsp yellow mustard
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp slap ya mama, or any Cajun seasoning
  • ½ black pepper
  • 3-4 tbsp granulated sugar, optional, I like mine Potato Salad a little sweet
  • ½ cup of sweet relish

See the recipe card for full information on ingredients and quantities.

Step 1: Peel your potatoes and let them sit in cold water. Then dice them up and pour out the excess water.

Step 2: In a pot, bring 8 – 10 cups of water to a boil, then add 3 tbsp of chicken bouillon!

Step 3: Add the diced potato the boiling water. Let them boil for 10 minutes or until they’re fork tender.

Step 4: Once your potatoes are done, drain then let them cool in the refrigerator before adding everything together. (about 20 mins)

Step 5: Finely diced 4 eggs and half of a red onion.

Step 6: In a big bowl, add the mayo, yellow mustard, garlic powder, slap ya mama, black pepper, sugar. Then mix it together, taste the sauce mixture and adjust the seasonings to your liking.

Step 7: Now add the eggs and sweet relish, mix and taste test again. Then add the red onions (optional) and the chilled potatoes.

Step 8: Mix well; I use a whisk to create a thoroughly combined mixture, yet leave some chunks of potatoes in it.

Step 9: Now scoop it onto a plate and decorate with the rest of the boiled eggs (quartered) sprinkle some paprika and parsley.

Step 10: Enjoy your delishhh Potato Salad!

Sitting the potato in cold water while you peel them prevents the potatoes from turning brown.

Sweet relish can be replaced with dill relish or cubes of sweet relish, whichever you prefer.

1. What Type of Mayonnaise Should I Use?

The mayo is the base flavor in the dressing so it is a very important ingredient. I find most people have a favorite brand. Go with your family favorite.

If you don’t usually buy mayonnaise, Hellman’s is very popular, but Duke’s mayo is the brand of the south. *wink*

2. Why Sweet Pickle Relish?

Most store-bought pickle relish is sweet. I like to use the refrigerated kind that has larger chunks. It provides a better texture and the sweetness adds a lovely balance to the salad. If you hate the idea of adding sweetness, find a tart pickle relish or add chopped banana peppers.

3. Is This Potato Salad Gluten-Free?

Yes, as long as the mayonnaise is gluten-free, the whole recipe is. (Most brands are, but double-check your jar.)

4. Can I Make This Potato Salad Dairy-Free Or Vegan Version?

Of course! This recipe is already dairy-free. However, to make it vegan, simply buy a vegan mayonnaise and then omit the hard-boiled eggs.

5. How Long Does This Potato Salad Last?

Stored in an airtight container in the fridge, this salad will last a week.

6. Can You Freeze This Potato Salad Recipe?

I wouldn’t. The thawing process will change the texture and the dressing will not be as creamy.

7. Can I Add Other Ingredients to Mix Things Up?

Sure! Try adding: bacon, rosemary, scallions, chopped banana peppers, shredded cheese, or sour cream.
